The Scarsdale diet originated in the U.S. a few decades ago. It was presented as the ideal solution to obtain a rapid weight loss (almost 500gr. per day) so as to be defined as a “miraculous diet”. However its inventor was Herman Tornower and promised that with it it was possible to lose almost 500 gr. per day. So he argued that it was possible to lose weight quickly, almost 500gr. per day, with a drastic reduction in carbohydrate intake. Independent of calorie intake which could not undergo proportional reductions, ie “not to reduce calories excessively but to reduce carbohydrates a lot”.

So ot claims that fats should also be reduced (the reduction, however, must not be as drastic as that of carbohydrates). In principle it is part of the “low carb” diets which therefore base their results on a ketogenic effec. It is on the production of ketone bodies which have a slight toxic effect if produced for short periods but also anoresizing effects.

Despite what the defenders of this diet claim with it, the yo-yo effect would be encountered, that is, a rapid recovery of the lost weight. It is considered one of the last minute diets not to be followed for more than 1 or 2 weeks. During this period you can reduce your weight of almost 500gr. per day.

Obviously, in order for it to take effect and generate lasting benefits, it is necessary precise patterns. In particular, another very important thing, is to not give in to the temptation to skip meals. Therefore the breakfast, lunch and dinner sequence must be absolutely respected avoiding mid-morning “snacks” and mid afternoon. Then it seems superfluous to add that if you want to lose weight for aesthetic and health reasons you have to choose healthy foods. So junk foods must be abolished in this diet. In fact they are always rich in toxins, free radicals, unsaturated fats and often simple sugars (therefore high glycemic index).

Another important thing is that carbohydrates must not represent, during the period of application of the diet, a majority portion. Therefore reduce both simple carbohydrates such as sugars and complex carbohydrates such as bread and pasta. Obviously you need to reduce fat by choosing lean foods so to reduce calories to lose almost 500gr. per day. Like any diet it is recommended to increase water consumption.

The reason for the increase in water consumption lies in the fact that water is beneficial for the body. Then above all it is the fact that this diet belongs to the category of “ketogenic diets”. Therefore increasing the introduction of water will greatly help the kidneys. Then the increased renal work is due to the need to purify the body  follow by eliminating the ketone bodies. In fact they necessarily form during this diet by means of urine. So you can unite purification with a lost of almost 500gr. per day of weight.

I remind my readers that the production of ketone bodies is a “side effect” of the catabolism of body tissues. In particular as a consequence of the low-calorie and low-calorie regimen typical of this diet. It should be superfluous to add that, during this die smoking and excess alcohol are absolutely not recommended during this diet. Healthy drinks such as purifying and deflating herbal teas (drunk without sugar or with a maximum of half a teaspoon of honey) are recommended.

Massimiliano Mangafà                                                                                                                                                                                                                                                                     *******************************************

                                                                                                                 SOYA AND VIGOR DIET

Almost all diets are based on reducing the introduction of food aimed at weight loss (until almost 500gr. per day)l. There are some particularly advanced diets that are based on another principle namely that of changing the metabolism. One of them is the Vigor diet. It aims to make the subject lose weight not only by making him eat less. But, above all, by making him burn more energy by acting on the metabolism. The creator of this diet observed after a study period that reducing caloric intake for a long time does not lead to constant weight loss. But leads to the adaptation of the organism to the with a greater ability of the body to assimilate nutrients transforming them into fats.

Studies by Dr. Duranti have shown that effective weight loss(e.g. almost 500gr. per day) is obtained by acting on the “metabolism switches”. Then in order to induce the transformation of sugars into energy and not into fats. This effect is obtained with a well-studied alternation of foods with an action also aimed at achieving a better hormonal balance. Obviously the effectiveness of this diet also depends on a correct lifestyle combined with moderate physical activity.

The name of this diet is VIGOR which derives from the acronym (Variation of the Glycemic Index of Rebalanced Hormones). Then which means that it is based on the principle that by reducing insulin peaks it is possible to keep blood sugar low.

In particular frequently high blood sugar can induce insulin resistancei. So the body will have difficulty regulating its blood sugar and this can lead to diabetes and weight gain.

First of all, it will be necessary to ingest low glycemic index carbohydrates to stimulate the metabolism. This would prevent the build-up of glycogen in the liver and blood sugar which are one of the causes of weight gain. One of the low glycemic index foods that would be well suited to this diet is soy.

Furthermore, it is the only one that should not be missing from the vigor diet of vegetarians, vegans. But also those who want to implement a drastic reduction in meat intake for health, ethical reasons or to lose for example almost 500gr. per day. It is divided into various phases to be applied with five days a week (Mon – Fri) “low carb” with a reduction of carbohydrates in favor of proteins.. (eg legumes such as soy and others with vegetables). A detoxifying day ( Sat.) with a mainly vegetable ingestion. Then one day (Sun) which must be “high carb” with two good portions of carbohydrates (pasta or rice) to rebalance the metabolism.

The constant application of this diet will produce positive effects on the metabolism in a few weeks. In particular with consequent weight loss and control of the blood values with consequent improvement of the state of health.

WEEKLY MANAGEMENT OF THE VIGOR DIET

The VIGOR diet acts on the metabolism switches by modifying the biochemical state of the organism. In order to reduce the ingestion of carbohydrates with the aim of triggering those metabolic mechanisms that reduce the accumulation of those carbohydrates. Then it will reduce the production of adipose tissue. Those who have tried a diet know that, often, the only caloric restriction is not enough to lose weight untill almost 500gr. per day. In particular and that usually one must act at the metabolic level because it is necessary to prevent the body from accumulating adipose tissue.

It is very effective in “teaching” the body to obtain energy by burning fat instead of carbohydrates. It is necessary to program a menu to be applied diligently every day. So that a moderate calorie restriction is accompanied by a biochemical “conditioning” of the metabolism.

Obviously, because any diet regime is successful, it is always good that it does not induce a sacrifice in those who follow it. So is better if it is based on pleasant foods to eat. So a light, complete and nutritious breakfast is recommended and the same must also be true for lunch and dinner. I would start the day with a healthy breakfast based on soy milk, honey and dried fruit. The latter will provide a good supply of vitamin E and antioxidants as well as valuable proteins).

So a soy burger (see recipe in the blog) and a fruit. I would end the day in perfect “Vigor diet” style. Then with a dinner based on a legume salad and a plate of green salad topped with extra virgin olive oil with crumbled tofu inside.

This dietary regime should be adopted from Monday to Friday. On Saturday and Sunday I recommend a similar variety of foods with a 25% increase in caloric intake. Here is a valid Vigor diet plan: MON – FRI: morning — – 300gr. SOY MILK; – 50gr. DI NOCI; – 2 SPOONS OF HONEY; spuintino —- 80gr. SOYA YOGURT; -1 APPLE; lunch —– 300gr. OF BIO SOY HAMBURGER (see recipe in the blog), 40gr. WHOLEMEAL BREAD, 150gr. STRAWBERRIES; dinner —— 100gr. SOY BEANS seasoned with garlic, parsley, extra virgin olive oil, 100gr. Diced TOFU WITH a side dish of green salad topped with extra virgin olive oil and soy sauce.

This diet can be adopted without problems by anyone without serious blood sugar problems or some nutritional dysfunction. In individuals not affected by these problems it would represent a very healthy diet. In fact it would allow to keep blood sugar and values such as cholesterol and triglycerides under control.

Soy is a legume that has now become widespread among those who are passionate about healthy eating. And also those who are against the use of animals for food purposes. So BIO soybean brings benefits to those who consume it. It has been known for many centuries to the Eastern peoples and, by now, it is also known in the West. Perhaps it is less known that this precious legume can play a large role in a weight loss diet. In fact it acts on the metabolism and on the process of accumulation of fats from a biochemical point of view. So it is possible to lose untill 500gr. per day.

Soy can help us lose weight because it contains proteins that hinder the accumulation of fats as well as having anti-inflammatory activity. It contains substances that reduce the deposition of fat inside the cells (adipocytes). They also hinder some inflammatory processes harmful to the body by defending us from a series of cellular and tissue damage.

LOW GLICEMICS INDEX OF SOY                                                                                                                                                                                                                                                                            First of all, soy does not contain casein or lactose which can create inflammatory states and intolerances in some subjects. Another very important reason to include soy in a weight loss diet is that soy has a low glycemic index. It stimulates very little the production of insulin avoiding the excessive formation of fat in the cells. Another very important thing is that it stimulates little the production of the chemical substances that induce appetite.

It also effectively counteracts the accumulation of fats deposited on the walls of the arteries and protects the cardiovascular system thanks to its omega3 content. It also has a stimulating action on the production of muscle fibers (lean mass) at the expense of the fat mass).

Weight loss can be obtained with regular consumption of soy. Also with regular consumption of the lipid part of soy which is lecithin easily available in many stores.

Lecithin will not only be very useful in diets but will provide valuable help in reducing harmful fats in the blood. LDL cholesterol, while inducing an increase in “good” cholesterol. These products should be included in the list of foods usually present in our kitchens and on our tables. Then in order to “treat ourselves by eating”.

Thanks to those that are real scavengers of our arteries. And that do not belong to harmful animal fats that they would ruin our health and shorten our lives. So another thing not to be underestimated and equally important is that these are vegetable protein sources. So do not require the suffering of other sentient beings to be produced.                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                         ****************************************************                                                                                                                                 SOYBEAN AND NUTRACEUTICS

Nutraceuticals is a new discipline in the food sciences. It includes food and the possibility of using it as if it were medicine. Is known that fruit, vegetables and citrus fruits in particular are the body’s precious allies against the cooling diseases. In particular they are typical of the winter season as well as performing a great preventive action. So it is also known that vegetables are rich in fiber. Therefore are suitable for those who want to help the intestine to maintain a good degree of motility.

Another example is that of dairy products which, thanks to their vitamin D content, have an effective action in preventing and treating osteoporosis. In fact this vitamin promotes the fixation of calcium in the bones. In particular who is an athlete who burns a lot of energy produces a large amount of free radicals. Then they have a harmful action against tissues and DNA. So DNA damage can be of various kinds. In fact you can go from a “shortening of telomeres” that produces long-term damage. It is because the chromosomes, over the years, lose genetic material losing their efficiency. But the damage can be much more serious as the onset of tumors.

Food can be the cause or cure of diseases such as hypercholesterolemia. Everyone knows that eating foods rich in (saturated) animal fats such as meats, eggs, meats, cheeses causes an increase in LDL cholesterol. In fact it is the bad one. Anyway not everyone knows that there are foods that, if eaten frequently, can lower the index of cardiovascular risk. This is the case of foods containing HDL cholesterol (the good one) and among them I cannot avoid mentioning soy.

Another goal of nutraceuticals may be to promote correct fatal development during gestation. This is the case of folic acid or vitamin B9 which is also present in significant quantities in soy. Soy is almost a magical food that should be included in any proper diet. This choice would give the maximum of its benefits if you chose the no-GMO variant of soy. In fact the GMO has undergone DNA changes that could be harmful to human health. In particular because the GMO variant has the characteristic of being able to coexist with doses massive glyphosate. So it is a herbicide very harmful to health but very effective against weeds. Therefore it is appreciated by multinationals that practice intensive agriculture on an industrial level.

                                                                                                                                                                                                                                SOYBEAN AND HUMAN FOOD

Soy is a legume and, as such, among plants, it is a food particularly rich in proteins. In particular with a high biological value, since it can be considered a valid substitute for meat. In fact it is a peculiar characteristic of all legumes. So they have the ability to capture atmospheric nitrogen and use it to “manufacture” high biological value proteins.

This ability is due to the ancestral symbiosis that has existed for millions of years between the legumes and particular families of bacteria. They are called “nitrogen fixers” which have the ability to capture the atmospheric nitrogen present in the air in a percentage of 78%. Then make it available to the plant to become organic nitrogen therefore usable for making proteins.

The soybean is capable of doing all this very effectively because it is capable of producing protein compounds autonomously. In fact, the protein content of its seeds can exceed 36%. It has a protein content higher than that of meat. Then it is close to it as regards the biological value (quality of amino acids). So that is, amino acids that can be used by each animal for hormonal, biochemical or plastic purposes.

However, it would be advisable to take organic and non-GMO soy because it is much healthier. In fact, GMO varieties are created in the laboratory to be able to live with massive doses of herbicides. Furthermore they resist pests thanks to the content of particular substances. So its regular intake (2 or 3 times a week) would allow to take the same proteins as meat. Then by eliminating (if you are a vegetarian) or reducing the intake of this food which is often present in excessive quantities on our tables. Ethical considerations part as regards animal welfare, involves the increase of cholesterol, triglycerides and uric acids in the blood. It has been shown that eating protein from animal sources often can lead to serious circulatory problems, malfunction of the heart and liver.

POSITIVE EFFECT OF HDL CHOLESTEROL

Soy fats, on the other hand, are protective. In fact the HDL cholesterol that is present in this legume has the function of cleaning the blood vessels. So the benefits of soy are demonstrated by the low incidence of cardiovascular risks in the population who make regular use of it. So like the eastern peoples who often use it in the kitchen. The only negative aspect of soy could be represented by the use of herbicides and fertilizers during its cultivation. These problems would be completely eliminated by the use of organic and non-GMO soy made in Italy.
